this week's menu

This morning I worked up a menu for the week. I usually do it before the weekend is over and then go buy groceries but we had a very busy weekend. So I will have to go with all three kids in a bit! Won't that be fun?! It's a busy week in our home and I usually go crazy with so many things in one week but for some reason, it is not bothering me at all. When so much is on my plate, I usually try to figure out what I can get out of. There is nothing this week I want to miss! Incase you are struggling with what to cook for your family this week, here are some ideas!

Monday- Veggie Quesadillas with Pico de Gallo (click on the link)
If you have not read The Pioneer Woman Cooks, you MUST! I am adding all kinds of dishes to our menu because of her. I love her!

Tuesday-Swiss Steak (click on the link)
This is my Bible Study night and I do this recipe in the crock pot. It's easy on nights like this. The only thing I have to make are the mashed potatoes. I serve it over mashed potatoes and my husband loves it!

Wednesday- We don't usually have anything on Wednesday nights but we have a meeting this week and dinner will be at someone's house. I don't have to plan a meal!

Thursday-Pizza from Dominoes
I have rehearsal Thursday night and Mike, one of the guys in the band, gave Jeremy a very nice gift. He gave him a giftcard for Dominoes for him to use while I was at rehearsal this week. Mike has expressed to Jeremy his appreciation for taking care of the kiddos week after week while I rehearse. Isn't that nice? WOW! It was a gift to me too because I don't have to worry about dinner. :)

Friday-Meatloaf, mashed potatoes, green beans
This recipe is my own and I don't even know where to begin when writing it out. It's all in my head! Yes, I have mashed potatoes twice in one week and my husband will be thrilled! It makes a ton so we will probably invite someone over for dinner. :)

My children love quesadillas. One day I had nothing but cheese, bacon and tortillas so I made them bacon quesadillas. They are now addicted. You would have thought I gave them candy they were so excited. Easy to make and easy to eat.

just read this menu for the swiss steak to my Jeremy and he said it sounds FABULOUS.. we are doing low carb so its a CAN have!!!

I love the Pioneer Woman Cooks, too! She inspires me with her food that a man would love:-)

(I am totally borrowing the swiss steak idea tomorrow; I have all the ingredients on hand so it wil be so easy in the crockpot.)
