healthy AND delicious!


I make two to three trips to HEB a week. We run out of milk, I forget milk or we need more fruit. Over the last few months, we go through fruit like water. We are spending more money on food but we hardly ever buy soft drinks anymore (that's a miracle) and we don't eat out like we used to. Since Jeremy is trying to be healthy, he does not mind if I spend a little more to get our house healthy. We both LOVE to eat and we both would eat all day if we could. And when we go out for Mexican food, we go crazy on chips and salsa! By no means have we quit indulging from time to time. Keep in mind one of my hobbies is baking! :) But I have totally quit buying crap! Instead of grabbing cookies or some other kind of sugar filled treat, I stop by HEB for almonds, trail mix, granola or dried bananas. Oh and I love soy nuts! A hand full of something out of one of those bags truly fulfills the snack urge in me.

For lunch? Here is a delicious turkey wrap on a sun dried tomato tortilla with turkey, swiss, avocado, tomato and a little bit of honey mustard. Jeremy loves these and the kids are starting to like them as well. My splurge at lunch are these Central Market Veggie chips! They are not totally healthy but they taste soooo good. :) I'm not a big sweets person but I do love fig newtons and you can buy those fat free too. I don't but you can! :) Veggie chips and Fig Newtons, that's where I let loose! :)

I've really changed our lifestyle slowly around here so Jeremy would not go into food shock and finally he appreciates it as much as I do. Anyone can eat healthier and you don't have to spend lots of money to do so. There is always a way!

After leaving TX we had a hard time finding an option for our chips & salsa addiction. We now make homemade pita chips. So good, and better for you. Cut up one whole wheat pita & mix with 1 1/2 T of olive oil and salt & pepper to taste. Bake 400 for about 5 min. Flip and back another 2 minutes or so. Serve with hummus or by themselves. Even the kids love 'em.

I just wrote in my journal this morning about being more diligent in working on better family eating habits.
