American Idol Night Menu for this week!

I try to make Tuesday nights a fun night in our house so that of course means good food to eat while we watch American Idol! Tonight we are having one of Jeremy's favorite meals and my favorite desert in the whole world and I am serious, this is my FAVORITE DESERT!

Tonight's Menu is Crescent Roll Chicken served over rice, steamed Broccoli and Lemon Bars!

Crescent Roll Chicken
(I've been making this for about three and a half years and we still love it!)

4-6 Chicken Breasts, boiled, cooled, chopped
8oz cream cheese, softened
1/4 c milk
4 Tblspn of butter
salt and pepper to taste
little bit of garlic salt
(and sometimes I chop up green onions to add to the mix)

Mix all together, set aside

2 Crescent roll cans
(I use the butter and flaky ones)

Roll out dough so 2 triangles form one rectangle, stretch and push seam together. Place a spoon full of the chicken mixture in the middle and bring four corners up around it and twist top to secure. (kind of like a hershey kiss)

If you want you can add some butter on top and sprinkle bread crumbs for looks. It looks kind of pretty when they come out!

Gravy is one can of cream of chicken or mushroom and I add milk and salt and pepper. Put Crescent roll chicken on top of a plate of rice (I use wholegrain brown) and cover in gravy! Easy and delicious!

Lemon Bars for Desert!

1 stick of butter (I always use unsalted butter when baking)
1/3 cup powd sugar
2 tspns of vanilla
1 3/4 cup of flour (divided)
8 oz cream cheese
2 cups of sugar
3 eggs
1/2 cup lemon juice
1 tblsn of grated lemon peel

preheat oven 350

13X9 lined with foil or parchment paper
spray with bakers joy or whatever you use
butter, powd sug, vanilla, mix all together
slowly add 1 1/2 cup flour
press in bottom of pan
bake for 15 min or until golden

Beat cream cheese, sugar, then add remaining 1/4 cup of flour, eggs, then stir in lemon juice and zest (if you don't have grated lemon peel-no biggy).
Pour into crust and bake for 3o minutes and after it's cooled for about 20 minutes, sprinkle powd sugar on top!

Hopefully I did not leave anything out!

Oh my, those sound good- I love lemon bars, though I tend to prefer a graham cracker crust. Have you ever tried Martha's lemon cheesecake bars? SOOOO good.

Making this tonight. It sounds so good!
I guess you just bake it according to the crescent roll directions, right? That's what I'm going to do. :) Hopefully I won't burn it.

Yum!
